St. George wears early 16th century armour: a hauberk with short sleeves worn over full plate armour for the arms and gauntlets; full leg armour with bear sabatons; an armet or close-helmet with a flat visor worn over a mail standard (collar); a breastplate, covered by his jerkin/jacket that ends in a pleated skirt (bases), so typical of the late 1490s and first half of the 16th century. The horse armour depicts the Burgundian emblems: flint-and-steel with flames and a St. Andrew's cross made of staves.
