giancarlo piubelli grew up in soave. both of his grandfathers were growers ? one in soave, the other in valpolicella. so it seemed only natural that giancarlo should gravitate toward winemaking, earning a degree in viticulture and enology in conegliano, followed by studies in winemaking technology and victiculture at the university of verona. stints as a wine analyst and cellar hand in northern italy and abroad expanded giancarlo's horizons, but he returned home in 2008 to work as a researcher at the university of verona. in 2010 giancarlo was recruited by cantina di soave to head up winemaking at its rocca sveva winery. there he has embraced the opportunity to research and experiment with the best grapes and some of the most cutting-edge technology in the area. always looking to improve, this young, scientific winemaker is especially passionate about one of the more undefinable, sensual characteristics of wine: aroma.
